Stuffed Chicken Breast Recipe
Do you run out of ideas when it comes to chicken? Most people I know just cut it into chunks and use it in curries etc, but there is so much more to it than that. This stuffed chicken breast recipe is really simple but so versatile. Plus, it tastes amazing too!

- Leek
- Chorizo
- Cream Cheese
- Extra Mature Cheddar
- Bacon
- Butter
- Garlic
- Chicken Breast
How-to Guide
- Start by chopping the leek into thin strips and mixing with melted butter in a ceramic oven dish. Place in the oven on a low (120 degrees celsius) heat and leave to cook whilst you get on with other things!
- Whilst the leek is in the oven, prepare the stuffing for the chicken.
- Chop the chorizo and garlic into small chunks and grate the cheddar.
- Mix the garlic, cheddar and chorizo with the cream cheese in a bowl. Make sure the mixture is thoroughly combined to ensure even distribution of the different stuffing flavours.
- Take your chicken breast and create a ‘pocket’ in the for the stuffing. I do this by butterflying the breast. Here is a video that shows you one way of doing it how to butterfly a chicken breast. I find the big, butcher-bought chicken breasts are far better than the low quality ones as you have far more room.
- Once you have open the pocket in the chicken breast, fill it with your stuffing and cover the opening with a slice of bacon.
- Place the chicken breasts on top of the leeks (which should be barely cooked) and cover with foil. Bake in the oven at 200 degrees celsius for 25 minutes, or until they look like this…
- The cheeses will melt slightly, leaving the chorizo and some of the cheddar in the breast. The melted cheese will mix with the leeks and chicken juices to create a really tasty gravy! By the way – you wont need to season this. The salty bacon, chorizo and cheese do that for you.
I served this stuffed chicken breast recipe with a really simple herby, tomato and mozzarella salad. You can pour the juices from the roasting dish all over the chicken breasts and salad to create an easy yet tasty dish!
The great thing about chicken is its versatility and the fact that it goes so well with so many flavours. Experiment to find others that you like. I personally think sun-dried tomatoes work really well as a stuffing, as does sausage meat. Have a play around and you will quickly find flavours that you like!
