How to Cook Beef Casserole Parcels
I picked up a recipe card in Waitrose yesterday. Actually, I do this a lot and never use them. Full of good intention, I collect these things and leave them in the kitchen. I don’t actually know where they end up – I think Rachel throws them in the recycling because she knows full well I wont use them!
But this time, it was different. I found a recipe for a cabbage parcel that involved a really bland sounding – mushroom and ricotta or something. I didn’t fancy that, but I liked the idea of using cabbage as a parcel so came up with this little idea…Beef casserole parcels!
Ingredients
- Braising Steak
- Peas
- Beef Stock
- Onion
- Cabbage
- Carrots
How to Guide
- Chop the onion into a fine dice and gently fry in the pan.
- Cut the steak into very small pieces (cut the meat against the grain, which makes it more tender as it cooks).
- When the beef is browning, chop the carrots into a fine dice and add to the pan.
- Mix up the beef stock and add that to the pan.
- Bring this to the boil for 2 minutes, then drop to a simmer for 2 hours, before adding the peas when the mixture has reduced by half.
- Keep the mixture cooking over a low heat until the liquid evaporates further.
- Whilst the mixture continues to cook, take the largest leaves off the cabbage and cook for 2-3 minutes until they have softened rather than wilted completely.
- Fill the parcels with the beef mixture. Wrap the mixture by spooning mixture into the centre of the leaf, then fold the sides in. Roll the leaf lengthways and place in the dish.
- Mix up a little extra beef stock (no more than 1/4 pint) and pour over and around the cabbage leaves – this helps the steaming process.
- Cover the whole dish with tin foil and cook at 200 degrees celsius for around 20 minutes, steaming the beef casserole parcels.
- After the 20 minutes is up, serve and enjoy!
This dish can be really versatile – I am already thinking about other fillings for the parcels. It tastes really good and contains 4 vegetable portions – ideal!
